English Course Description |
This is an introduction course on food and beverage (F&B). The course is designed to provide a serious of fundamental knowledge on food and beverage management. The course will include the following issues: an introduction of F&B management, F&B segments and marketing, back of the house and equipments, F&B service, and internal management and operation in a restaurant. The purpose of this course is to provide the learners a basic understanding and knowledge on F&B management.
The course provides an overview of the restaurant management.

2. Foodservice organization
3. Human resources management
4. Marketing foodservice
5. Menu planning
6. Restaurant and kitchen design
7. Purchasing, receiving, storage, and issuing
8. Food production in kitchen
